To begin, remove defrosted beef from packaging and pat dry. In a mixing bowl, add 1 tbs of Olive Oil to 1 lb of ground beef.
Add 1 tbs Worcestershire, salt & pepper to taste. We recommend you add one whole cracked egg, this will act as a binder to help the meat from mincing. Feel free to add or subtract any spices you like. Mix well.
Next, form half-inch patties, then using your index finger or thumb, gently indent center of patty. Rub a touch of olive oil and place over hot coals or in a hot cast iron pan. Cook 4 minutes per side for rare/medium-rare or 5 minutes per side for medium doneness. Do not over cook.
You're almost there! Add Blue cheese crumbles to patties just before the burger is at the desired doneness, or place inside patties prior to.
Transfer to a plate, tent with foil and let rest a few minutes.
Top with fresh Arugula on a lightly toasted brioche bun and enjoy!
